1 large courgette
3 tsp chopped coriander (fresh or from jar)
2 tsp chopped ginger (fresh or from jar)
1/4 pt vegetable stock
50ml (ish) double cream
Cut broccoli and courgette into chunks (exact size not important, but not too large). Add coriander, ginger and stock. Steam or microwave until really soft (softer than you would serve them just as vegetables). Drain off the excess stock and put the vegetables in a food processor; process until finely blended, adding back a bit of the stock, plus the double cream.
Why, yes, this was an "end of the vegetable box" recipe...
